Two complementary talents come together
Alliance, as its name suggests, is the result of a meeting between two dynamic and complementary personalities: chef Toshitaka Omiya and restaurant manager Shawn Joyeux.
Together, they embody two faces of gastronomic excellence, combining the rigour of haute cuisine with the art of hospitality and service.
This subtle alliance is reflected in every aspect of the experience offered at Alliance, be it in our restaurant, private lounges or wine cellar.
Toshitaka Omiya
Osaka-born Toshitaka Omiya, has successfullyfused Japan’s culinary heritage with the sophistication of French cuisine.
After rigorous training under some of gastronomy’s greatest names, including Philippe Legendre, Alain Passard and David Toutain, the chef has achieved impeccable technical mastery, particularly in the art of sauces, cooking styles and combining flavours.


A unique career
Over the course of his career, he has developed a pared-back culinary identity, in which each ingredient is exquisitely rendered with almost surgical precision.
His cuisine, both minimalist and complex, echoes his Japanese roots while always remaining true to the elegance of French cuisine.


Shawn Joyeux
Shawn Joyeux epitomises the art of hospitality with style and precision.
Born in Neuilly-sur-Seine, Joyeux's career began in the world of service, which he explored in a variety of restaurants before moving on to some of the finest establishments in both Paris and Switzerland.
After gaining valuable experience at Guy Savoy in Paris and the Hôtel de Ville Restaurant in Crissier, Switzerland, he honed his expertise in sommellerie and front-of-house management.
His quest for excellence inspired in him a desire to offer a personalised service that was always attentive to the wishes of guests, and to create an atmosphere that coupled discretion with a welcoming feel.
He takes pride in sharing his carefully selected food and wine pairings, with a wine list featuring more than 700 references.


A unique alliance
The union of Toshitaka Omiya and Shawn Joyeux has created a restaurant where harmony reigns, both in the kitchen and front-of-house, and which has been extended to include two private lounges and a wine cellar, just a few steps away.
Together, they have created spaces where each and every detail is meticulously thought through to provide a refined and unique experience, embodying the very essence of the word "Alliance": a perfect complicity between creativity and savoir-faire.
